神戸大学と沢の鶴 (株) が新しい日本酒を開発しました
A New SAKE Developed in collaboration with SAWANOTSURU Co. Ltd.
A new type of Japanese SAKE "Akane-iro" was introduced to the market on Nov. 15. This SAKE was developed in a collaborative research project between Kobe University and SAWANOTSURU Co., Ltd., a well known Japanese SAKE brewing company in Nada-ward. One of the reasons which led to this collaboration was the signing of the Agreement for Collaboration between Kobe University and Nada-ward in 2004. A fruit of the successful cooperation between industry and academia.
An international student from Vietnam, Dr. Vu Thi Bich Hau, studying under the supervision of Professor TOSA Yukio of the Graduate School of Agricultural Sciences at Kobe University found the yeast strain which was the key to developing this SAKE. She walked around Nada-ku and gathered over 1000 different wild yeast strain. Out of all these, SAWANOTSURU selected the strain from Camellia sasanqua, the Kobe City Tree. The reason for this selection was because both Kobe University and SAWANOTSURU wanted to make a new kind of SAKE using indigenous flowers. The name "Akane-iro" comes from the dark red color of the SAKE which comes from the unpolished red rice used. "Akane-iro" is available in a 300 ml bottle for 398 yen (tax included).

神戸大学は沢の鶴株式会社との共同研究により、新しいタイプの日本酒を開発しました。 「茜彩 (あかねいろ)」と名づけ、同社が11月15日に発売します。
大学にとっては、富久錦と共同開発した「神戸の香」に次いで、2番目の日本酒です。 開発の鍵になった酵母は、外国人留学生が両者の所在地である神戸市灘区一帯を探し回った末、 「神戸市民の木」であるサザンカから分離に成功しました。
